SALAD NICOISE
   
Ingredients
1 Cos lettuce, leaves torn
250g cherry tomatoes
200g cooked mini potatoes, sliced
200g cooked french beans
1 tbsp spring onions, sliced
4 hard-boiled eggs, peeled and quartered
2 x 200g tins tuna fish
6-8 anchovy fillets
50g pitted black olives
3 tbsp french dressing
   
Directions
Scatter the salad leaves onto a plate. and mix in the tuna chunks.
Next add the tomatoes, spring onions, sliced potatoes and french beans.
Place the egg quarters around the bowl. Finish by decorating the salad with the strips of anchovy fillet, black olives and the French dressing.
