| Ingredients |

1 Cos lettuce, leaves torn |

250g cherry tomatoes |

200g cooked mini potatoes,
sliced |

200g cooked french beans |
| • |
1 tbsp spring onions, sliced |

4 hard-boiled eggs, peeled
and quartered |

2 x 200g tins tuna fish |
| • |
6-8 anchovy fillets |

50g pitted black olives |

3 tbsp french dressing |

| Directions |
| • |
Scatter the
salad leaves onto a plate. and mix in the tuna
chunks. |

Next add the
tomatoes, spring onions, sliced potatoes and french
beans. |

Place the egg
quarters around the bowl. Finish by decorating
the salad with the strips of anchovy fillet, black
olives and the French dressing. |
